Domaine de Fenouillet is located in Beaumes-de-Venise, between the Dentelles de Montmirail and Mont Ventoux, on a terroir where the landscape, exposures, and diversity of soils naturally give the wines their character. The vineyard covers 35 hectares across 8 communes, with highly contrasting profiles: Miocene sands, stony hillsides, clay-limestone terraces in the heart of the Dentelles… a broad palette that allows the estate to craft expressive wines while always preserving a thread of freshness.
The estate’s story is that of a family moving forward with its time. As early as the 1900s, Casimir Haut was already making wine and gaining recognition, notably with an award at the Exposition Nationale de Carpentras in 1902. The following generations came next: Louis, then Nicole and Yvon Soard, before the defining milestone of 1989, when Patrick and Vincent Soard built their cellar and established Domaine de Fenouillet, with the first vintage released in 1989.
The move to organic farming, with the vineyard certified organic since 2009, reflects this desire to work cleanly, with respect for living systems and the long term. Today, the fifth generation is at the helm: Justine, Patrick’s daughter, and Valentin, Vincent’s son, became co-managers in 2021, driven by a desire to modernise and develop new cuvées, later joined by Félicien in 2022.
In the cellar, the approach is one of precision. During vinification, everything comes down to observation and fine adjustment — temperatures, pump-overs, pressing, and ageing balances such as lees work and malolactic fermentation. It is a way of allowing each vat to tell the story of its grape variety, its terroir, and its vintage, with a style that seeks accuracy rather than effect.
Cuvées to remember (selection from the estate website)
• Terres Blanches (AOP Beaumes-de-Venise Rouge): a blend of Grenache, Syrah, and Mourvèdre from the clay-limestone terroir of the Dentelles, hand-harvested and aged in tank.
• Ventoux Blanc “Hippolyte”: an elegant and luminous cuvée, driven by beautiful freshness, combining white fruit, floral finesse, and delicately controlled balance.
• Muscat de Beaumes-de-Venise: the local emblem, in its white version and other expressions, made from Muscat à petits grains.
• Vacqueyras Rouge: a more structured style, described as powerful yet refined, with real length on the palate.
