Château Fonsalade – Organic Terroir Wines from AOP Saint-Chinian

Perched on the heights of Cabrerolles, north of Béziers, Château Fonsalade embodies the elegance and diversity of Languedoc wines. Its name comes from the Occitan word fonsa, meaning spring, a tribute to the many natural water sources found on the estate.

The vineyard covers about 30 hectares, planted on a patchwork of schist, limestone and sandstone soils. This mosaic, combined with ideal altitude, allows the production of wines that are both powerful, precise and elegant. The varietal mix is rich and balanced, featuring Syrah, Grenache, Carignan and Mourvèdre, alongside Merlot and Cabernet Sauvignon, creating a wide aromatic palette.

Viticulture is conducted with a sustainable approach, with a strong focus on biodiversity and soil health. Manual harvesting and precise parcel-based vinification ensure the preservation of each terroir’s identity. Ageing, carried out in tanks, large oak casks or barrels, is adapted to each cuvée to highlight balance and complexity.
